We’re thrilled to welcome Nicola Moore, one of the UK’s top nutritional therapists, who’ll share practical insights on how food can lift your mood, boost energy, and support wellbeing—without the pressure of strict diets.
To bring it all to life, Chef Vanessa Marx, Executive Chef at Bingham Riverhouse, will lead a short demo featuring simple, mood-boosting dishes you can easily recreate at home. Expect plenty of fresh ideas, real talk, and doable recipes.
Afterwards, enjoy a light, nourishing breakfast and coffee while connecting with fellow food lovers, professionals, and wellness enthusiasts.

Mex Ibrahim
Mex Ibrahim is co-founder of Women in the Food Industry. After almost 8 years as Head of Social Media & Marketing of the UK’s fastest growing food website, Great British Chefs, Mex has delivered a variety of award-winning digital marketing campaigns & now runs her own freelance social media, content creation & digital strategy business. Passionate about women’s equality & female empowerment, she co-founded Women in the Food Industry in April 2019 which became a Community Interest Company in July 2023. Mex sits on the Editorial Advisory Board of New Food Magazine and is a member of The Guild of Food Writers. Mex is also a trustee of the national charity School Food Matters (based in Richmond) and is a volunteer for social media & marketing at Kew Village Community Market.
Nicola Moore
Nicola Moore is a nutritional therapist with over 20 years’ experience and a Fellow of the Institute for Optimum Nutrition. She is passionate about helping people improve their wellbeing and their relationship with food through her one-to-one clinic work, her online coaching programme Liberate, and her podcast Healthily. Known for her down-to-earth, compassionate approach, Nicola supports individuals to make meaningful, sustainable changes that promote health without restriction.
Vanessa Marx
Vanessa Marx is leading a culinary revolution at Bingham Riverhouse. Known for her commitment to sustainable, seasonal, and foraged ingredients, Vanessa creates menus that celebrate locally sourced produce and slow-food principles.
Her culinary philosophy is rooted in the belief that food should be both healing and joyful. By prioritizing seasonal produce, clean proteins, and natural fats, Vanessa crafts recipes that are as flavorful as they are functional.
